Cut your apples into 1/8th to fill a clean 5 gallon bucket 3/4 of the way full.
Boil the water and sugar.
Once the mixture has boiled, remove from heat and add the cream of tarter.
Pour the sugar water mixture over the apples to fill the 5 gallon bucket. Cover with plastic wrap.
Let sit for 24 hours and strain off the juice.
Reheat apple juice and put into 1 quart jars.
Hot water can for 10 minutes in boiling water.
