I can not tell you how over the moon I was to receive these amazing jadeite inspired cookie cutters from Amador’s Craft Kits! Now with the most amazing cookie cutters, I had to craft the best sugar cookie and jadeite icing combo to give these cuties justice. This is one of my favorite sugar cookie recipes. I love that you don’t have to refrigerate the dough, so you can make it, cut, and bake them right away!
As far as icing, I truly hit the jackpot. I used a basic royal icing. The first icing tint I made was a horrible neon green, but the second try was a PERFECT match. It was pure luck! They magic recipe for this sweet jadeite colored icing was using this gel icing set. To achieve the jadeite color use 2 drops of lemon and 1 drop of sky blue. You’re welcome!

Jadeite Inspired Sugar Cookies
Ingredients
Sugar Cookie
- 2 1/2 sticks butter softened
- 1 c. sugar
- 1 egg
- 1 egg yolk
- 1 1/2 t. vanilla
- 3 c. all purpose flour
- 1 1/2 t. baking powder
- 1/2 t. salt
Royal Icing
- 2 T. meringue powder
- 6 T. water
- 2 2/3 c. powdered sugar
- gel food coloring
Instructions
- Preheat oven to 325 degrees.
- Beat butter and sugar, until light and fluffy.
- Add in egg, egg yolk, and vanilla.
- In a seperate bowl, whisk flour, baking powder, and salt.
- Mix in flour mixture in two parts. Mix until just combined.
- Use 1/4 of the dough and roll to a 1/4 inch thickness on a floured surface. Cut out cookies and bake for 11-13 mintues
- Prepare royal icing. Whisk the merigue powder and water for 3 minutes until foamy. Add powdered sugar and whisk until you have stiff peaks. Tint as needed with gel colors. Thin with water to get desired consistency.
